Giovanni Allario’s life is a journey of travels, cultural influences, and encounters. Born in 1991 in Caracas, Venezuela, and raised in Genoa, Italy, he initially pursued industrial design studies before realizing that his true passion lay in the world of hospitality.
After gaining his first experiences under La Lanterna, he moved to Paris, where he honed his skills, developed his creativity, and shaped a vision for his future that opened new doors. During his six years in France, he worked in some of the city’s best bars, contributing to the opening of Danico and later becoming the bar director at Le Syndicat—both of which earned top placements in The World’s 50 Best Bars.
In 2022, he returned to Italy, taking over the bar direction at Moebius in Milan, a restaurant, tapas bar, and cocktail bar where creativity and experimentation define the entire experience. His approach to cocktails is unconventional, reinterpreting classics and creating new recipes inspired by culinary techniques, always with a strong connection to Italian culture and ingredients. His vision for mixology led Moebius to rank 33rd in the 2024 World’s 50 Best Bars.
That same year, alongside patron Lorenzo Querci and chef Enrico Croatti, he embarked on a new venture—Lubna, also in Milan. Here, design, art, and music merge with mixology and open-fire cooking, creating a multi-sensory experience.
