The countdown has begun for the Identità Milano 2021 Congress. Here's the programme

75 days to go, little over 2 months, until the 16th edition of the event. Over one hundred speakers, around 70 lessons, international guests, the best of Italian food

The theme of the 16th edition of the Congress of Identità Golose, from the 25th to the 27th September 2021 at MiCo in Milan, will be Building a New Future: Work. As Paolo Marchi and Claudio Ceroni, founders of Identità Golose declared: “If we don't first solve this dramatic problem, if we don't give back to women the professional dignity they lost with the crisis, if young people will continue lingering in this economic limbo, it will be pointless to speak of what food will be like after the pandemic, if people will prefer innovation or tradition, gourmet pizzas or pizza margherita, plated desserts or a slice of cake, fish, meat or vegetables, gourmet gelato or classic flavours, always the same. And what wine to choose, and what service, at the restaurant as well as in hotels. Work comes first!”.

Here is the (almost) complete programme.

SATURDAY 25th SEPTEMBER – The programme on Saturday 25th September will focus on the theme of the congress – Building a New Future: Work – in the lessons in the Auditorium. Prestigious speakers will share their experiences and ideas on how to create new opportunities in this sector: among the confirmed ones, Davide RampelloCristina Bowerman, Dominga Cotarella, Franco Pepe, the director of Wall Street Italia Leopoldo Gasbarro, Enrico Bartolini, Joe Bastianich. And then his majesty Alain Ducasse, as president of les Collectionneurs. Two much awaited and popular sections will also be back: Identità di Pasta (in partnership with Pastificio Felicetti), where Carlo Cracco will open; and Identità di Gelato (in partnership with Motor Power), seven speakers and six lessons, with Martina Caruso breaking the ice and then Marco Pedron ending. Finally, in Sala Gialla 1, the first of three days of Identità Cocktail, in partnership with Bibite Sanpellegrino and Perrier.

SUNDAY 26th SEPTEMBER - In the Auditorium a new day dedicated to our theme Building a New Future: Work, with many of our best chefs: Carlo Cracco, Antonia Klugmann, Corrado Assenza, Massimiliano Alajmo, Davide Oldani, Moreno Cedroni, Pino Cuttaia, Gianfranco Pascucci, Michelangelo Mammoliti, plus Paulo Airaudo from Spain. There will also be a tribute to Andrea Paternoster, the “king of honey” who recently passed away: Assenza and Alajmo, together with Alfio Ghezzi, will remember him. In the other rooms: seven great pastry chefs will be on the stage of Italian Contemporary Pastry Making (in partnership with Petra® Molino Quaglia and Valrhona); six lessons (and 13 speakers) for a new section of the congress called “The future is today”. Finally, Identità di Sala is back, after the success of the past few years, with prestigious international guests including the great Josep Roca. And Identità Cocktail

MONDAY 27th SEPTEMBER – Fireworks, as usual, on the last day. In the morning, in the Auditorium, Massimo Bottura will cover the theme of the congress with other giants: Riccardo Camanini, Niko Romito and Josep Roca. In the afternoon, instead, space will be given to Dossier Dessert (in partnership with Valrhona), with a focus on fine dining and pastry making, with the Cerea brothers, Mauro Uliassi and Ciccio Sultano and their pastry chefs. In the other rooms, a focus on Identità Naturali (in partnership with Conapi and Mielizia), with five exceptional speakers; on Identità di Formaggio (in partnership with Parmigiano Reggiano), four lessons not to be missed; and on the classic Identità di Pizza (in partnership with Petra® Molino Quaglia), with eight speakers among great masters and young faces.
