Foil-baked rice

Rice
Honey
Pepper
Salt
Aromatic leaves
Pork fillet
Smoked mozzarella water
Endive

Cook the rice in the water with the seasoning and leave it to overcook. When ready, drain it and dress with the honey, pepper, salt and aromatic leaves.

Then lay it on a wet cloth, which will also be used to roll up the pork fillet. Roast the piece of meat in the oven for 20 minutes. Then leave to rest in a hot chamber.

Take the meat and serve with the smoked mozzarella water, jellified and sieved, and a piece of endive cooked with crumbled crispy bacon.
